When faced with a seemingly overwhelming number of creatures, check the nearby terrain for any helpful spots. By helpful I mean areas like a small hill, which you can partly scale, or a tree to put your back up against. In doing this you have to be sure that you are prepared to take out all of the creatures you are facing because even if you are facing them 1 at a time, you still have to go through them all before you can continue.
Note: This worked well in North Kryta Province against Gypsie Ettins.
