He's using the Cartography Made Easy mod. It works really well and is super easy to figure out where the areas are that you still need.
I did Tyria the old fashioned way, then used the mod for Cantha and Elona.

Where he is standing is Elona and not Cantha. Also, with a new update you don't need the full 100% explored to get the 100% title ;)
